Ingredients
  

2 pounds of russet potatoes

1 cup of sharp cheddar cheese, grated

1/2 cup of milk (or heavy cream for richness)

1/4 cup of unsalted butter

Salt to taste

Pepper to taste

Optional: Chives or green onions, chopped for garnish

Instructions
 

Peel the russet potatoes and cut them into even chunks for consistent cooking.

    Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

      Cook the potatoes for about 15-20 minutes or until they are fork-tender.

        Drain the potatoes and return them to the pot over low heat to remove excess moisture.

          Add the butter, and allow it to melt before adding the milk. Mash until smooth and creamy.

            Stir in the grated cheddar cheese until melted and well combined.

              Season with salt and pepper to taste. For an extra pop, fold in chopped chives or green onions.

                Serve warm and enjoy your creamy, cheesy goodness!
