Ingredients
  

1 cup heavy cream

1 cup unsweetened almond milk

1/2 cup sugar

2 teaspoons gelatin powder

3 tablespoons cold water

1 cup champagne or sparkling wine

1 teaspoon vanilla extract

Pinch of salt

Fresh mixed berries (strawberries, raspberries, blueberries) for topping

Mint leaves for garnish (optional)

Instructions
 

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.

    Heat the Mixture: In a saucepan, combine the heavy cream, almond milk, and sugar. Heat the mixture over medium heat, stirring until the sugar is fully dissolved and the mixture is warm (do not boil).

      Incorporate Gelatin: Once the cream mixture is warm, remove it from the heat. Stir in the bloomed gelatin until completely dissolved.

        Add Champagne and Flavoring: Allow the mixture to cool for a couple of minutes, then stir in the champagne, vanilla extract, and a pinch of salt. Mix well until combined.

          Pour into Molds: Carefully pour the panna cotta mixture into individual ramekins or silicone molds. Cover each with plastic wrap and refrigerate for at least 4 hours or until set.

            Prepare Toppings: While the panna cotta is chilling, wash and slice the fresh mixed berries. You can lightly macerate them with a sprinkle of sugar if desired.

              Unmold and Serve: Once set, carefully unmold the panna cotta by dipping the bottoms of the ramekins in warm water for a few seconds. Invert onto serving plates.

                Add Toppings: Top each panna cotta with a generous portion of mixed berries and garnish with fresh mint leaves if using.
