2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup cold butter, cubed

1 cup grated carrots

1/2 cup raisins or currants

1/2 cup chopped walnuts (optional)

1/2 cup buttermilk

1 large egg

1 teaspoon vanilla extract

Cream cheese frosting for drizzling (optional)

Instructions
 

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

      Add the cubed cold butter and mix until the mixture resembles coarse crumbs.

        Stir in grated carrots, raisins, and walnuts until evenly combined.

          In a separate bowl, mix buttermilk, egg, and vanilla extract.

            Pour the wet mixture into the dry ingredients and mix until just combined.

              Turn the dough out onto a floured surface and knead gently until it comes together.

                Pat the dough into a circle about 1 inch thick and cut into wedges.

                  Place the scones on the prepared baking sheet and bake for 15-20 minutes until golden brown.

                    Allow to cool slightly, then drizzle with cream cheese frosting if desired.
