Ingredients
  

2 large ripe bananas, sliced

1 tbsp butter

1/4 cup brown sugar

1 cup cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1/2 cup sour cream

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup dark rum

1/4 cup heavy cream

1 tbsp cornstarch

Pinch of salt

Instructions
 

Preheat the oven to 325°F (160°C).

    In a skillet over medium heat, melt butter and add sliced bananas. Sprinkle with brown sugar and cook until caramelized, about 3-4 minutes. Set aside.

      In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add vanilla extract and mix well.

        Incorporate eggs, one at a time, mixing until just combined. Fold in sour cream until smooth.

          In a separate bowl, mix graham cracker crumbs and melted butter. Press the mixture into the base of a springform pan.

            Pour half of the cheesecake batter over the crust, layer with caramelized bananas, and then pour the remaining batter on top.

              Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Let cool, then refrigerate for at least 4 hours.

                To make the rum glaze, combine dark rum, heavy cream, cornstarch, and salt in a saucepan. Heat and stir until thickened.

                  Drizzle the rum glaze over the chilled cheesecake before serving. Enjoy!
