For the Cheesecake:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

2 ripe bananas, mashed

1 tablespoon lemon juice

For the Caramelized Bananas:

2 tablespoons unsalted butter

¼ cup brown sugar

2 ripe bananas, sliced

For the Rum Glaze:

½ cup granulated sugar

¼ cup water

2 tablespoons dark rum

1 tablespoon butter

Instructions
 

Prepare the crust: Mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes and let cool.

    Make the cheesecake filling: In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each. Stir in vanilla extract, mashed bananas, and lemon juice.

      Combine and bake: Pour the cheesecake filling onto the cooled crust. Bake at 325°F (160°C) for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for another hour to prevent cracking.

        Caramelize the bananas: In a skillet, melt the butter over medium heat. Add brown sugar and sliced bananas; cook until bananas are golden and caramelized, about 3-4 minutes. Remove from heat and let cool.

          Prepare the rum glaze: In a small saucepan, combine sugar and water; bring to a boil until the sugar dissolves. Stir in dark rum and butter; simmer a few minutes until slightly thickened.

            Assemble and chill: Spread the caramelized bananas over the cooled cheesecake. Drizzle with rum glaze and let it chill in the fridge for at least 4 hours or overnight for best flavor.
