6 ripe bananas, sliced

1 loaf of day-old brioche or challah bread, cubed

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup caramel sauce (store-bought or homemade)

1/2 cup chopped pecans or walnuts (optional)

Whipped cream or vanilla ice cream (for serving)

Instructions
 

Prepare the Bananas: In a large skillet over medium heat, add 2 tablespoons of butter. Once melted, add the sliced bananas and 1/4 cup of brown sugar. Cook until the bananas are caramelized, about 4-5 minutes. Remove from heat and set aside.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a large baking dish (about 9x13 inches) with non-stick spray or butter.

      Mix the Bread and Bananas: In a large mixing bowl, combine the cubed bread and caramelized bananas, gently tossing to coat. If using nuts, add them to the mixture.

        Prepare the Custard: In another bowl, whisk together the eggs, milk, heavy cream, the remaining 3/4 cup of brown sugar, vanilla extract, cinnamon, and salt until well combined.

          Combine Mixtures: Pour the custard mixture over the bread and bananas, pressing down gently to ensure all the bread is soaked. Let it sit for about 15 minutes to absorb the liquid.

            Bake: Drizzle 1/4 cup of caramel sauce over the top of the bread pudding. Bake in the preheated oven for 40-45 minutes or until golden brown and set in the center.

              Cool: Remove from the oven and allow it to cool for about 10 minutes.

                Serve: Slice the bread pudding into squares and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream on top. Drizzle additional caramel sauce over each serving for an extra touch of sweetness.
