4 large portobello mushrooms

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, chopped

2 cloves garlic, minced

3 tablespoons balsamic glaze

3 tablespoons olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Clean the portobello mushrooms with a damp paper towel and remove the stems. Gently scrape out the gills with a spoon if desired for extra filling space.

      In a bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, minced garlic, olive oil, balsamic glaze, salt, pepper, and red pepper flakes (if using). Toss gently to coat.

        Place the portobello mushrooms on the prepared baking sheet, gill side up. Generously fill each mushroom cap with the tomato and mozzarella mixture.

          Drizzle any remaining balsamic glaze over the stuffed mushrooms for added flavor.

            Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.

              Remove from the oven and let cool slightly before serving.

                Garnish with additional fresh basil leaves for a pop of color and fresh flavor.
