Ingredients
  

1 lb andouille sausage, sliced

1 cup long-grain rice, rinsed

1 small onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

2 cups chicken broth

1 teaspoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

1 tablespoon olive oil

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.

    Cook the Veggies: In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until the vegetables start to soften. Add the minced garlic and cook for another minute until fragrant.

      Add Rice and Spices: Stir in the rinsed rice, Cajun seasoning, smoked paprika, black pepper, and cayenne pepper. Cook for 1-2 minutes to toast the rice slightly.

        Combine & Simmer: Pour in the can of diced tomatoes (with their juices) and the chicken broth. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 15-20 minutes, or until the rice is fully cooked and has absorbed most of the liquid.

          Return Sausage to Skillet: After the rice is cooked, return the browned sausage to the skillet and mix everything together. Allow it to warm through for about 2-3 minutes.

            Garnish & Serve: Remove from heat and garnish with chopped green onions and fresh parsley. Serve hot, and enjoy your flavorful Cajun Sausage & Rice Skillet!
