Ingredients
  

1 lb Cajun sausage (sliced)

1 cup long-grain rice

2 cups chicken broth

1 bell pepper (diced)

1 onion (chopped)

2 cloves garlic (minced)

1 can diced tomatoes (14 oz)

1 teaspoon Cajun seasoning

Salt and pepper to taste

2 tablespoons olive oil

Chopped green onions for garnish

Instructions
 

In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned.

    Add chopped onion, bell pepper, and garlic to the skillet; sauté for 3-4 minutes until softened.

      Stir in the rice, diced tomatoes, Cajun seasoning, salt, and pepper.

        Pour the chicken broth into the skillet and bring to a boil.

          Once boiling, reduce heat to low, cover, and let simmer for 20 minutes, until rice is cooked and liquid is absorbed.

            Fluff with a fork and garnish with chopped green onions before serving.
