Ingredients

1 cup brown sugar

1/3 cup cornstarch

1/4 teaspoon salt

2 3/4 cups whole milk

4 large egg yolks

4 tablespoons unsalted butter

2 teaspoons vanilla extract

Whipped cream (for topping)

Optional: chocolate shavings or caramel drizzle for garnish

Instructions

In a medium saucepan, combine brown sugar, cornstarch, and salt; whisk to blend.

Gradually add milk while whisking until smooth.

Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil.

In a separate bowl, whisk the egg yolks; then slowly temper them by adding a small amount of the hot pudding mixture.

Once tempered, add the egg yolk mixture back to the saucepan. Continue to cook, stirring, for an additional minute.

Remove from heat and stir in butter and vanilla until fully melted and incorporated.

Pour the pudding into individual serving dishes or one large bowl.

Cover with plastic wrap directly on the surface of the pudding to prevent a skin from forming.

Chill in the refrigerator for at least 2 hours before serving. Top with whipped cream and any desired garnishes.
