The foundation of our poke cake is a yellow cake mix. This choice is not arbitrary; yellow cake mix provides a light, fluffy texture that pairs beautifully with the praline topping. The pre-packaged mix ensures that even novice bakers can achieve consistent results without the stress of measuring out multiple dry ingredients.

Ingredients

1 box yellow cake mix

1 cup water

1/3 cup vegetable oil

3 large eggs

1 can (14 oz) sweetened condensed milk

1 cup heavy cream

1 teaspoon vanilla extract

1 cup light brown sugar

1/2 cup unsalted butter

1 cup chopped pecans, toasted

1/4 cup powdered sugar

Whipped cream (for topping, optional)

Extra pecans (for garnish, optional)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

Prepare the cake mix: In a large mixing bowl, combine the yellow cake mix, water, vegetable oil, and eggs. Beat on medium speed for about 2 minutes until the batter is smooth.

Bake the cake: Pour the batter into the prepared baking pan. Bake according to package instructions, usually about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for around 10-15 minutes.

Poke the cake: Once the cake has cooled slightly, use the end of a wooden spoon or a fork to poke holes all over the top of the cake, about 1 inch apart.

Create the praline topping: In a saucepan over medium heat, melt the butter and brown sugar together, stirring continuously. Once the mixture is smooth and bubbly, remove from heat and stir in the sweetened condensed milk and vanilla extract.

Pour the topping over the cake: Slowly pour the warm praline mixture over the poked cake, making sure it seeps into all the holes. Let it sit for a few minutes to absorb.

Chill the cake: Cover the cake and refrigerate it for at least 2 hours (or overnight for the best flavor).

Prepare the whipped cream (optional): In a bowl, whip the heavy cream until it forms soft peaks. Gradually add in the powdered sugar and continue to whip until you reach stiff peaks.

Serve the cake: Once chilled, top the cake with the whipped cream and sprinkle with toasted pecans for garnish.

Enjoy! Slice and serve your Buttery Pecan Bliss Poke Cake to friends and family!
