Ingredients

1 lb chicken thighs (boneless, skinless)

1/2 cup brown sugar

1/4 cup soy sauce

1 cup pineapple chunks (fresh or canned)

1/4 cup ketchup

2 cloves garlic (minced)

1 tablespoon ginger (grated)

1 tablespoon olive oil

1/2 teaspoon black pepper

1 green onion (sliced, for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Marinade: In a bowl, whisk together the brown sugar, soy sauce, ketchup, minced garlic, grated ginger, and black pepper to create a marinade.

Marinate the Chicken: Place the chicken thighs in a resealable bag or dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 4 hours).

Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess liquid to drip off, and add to the skillet. Cook for about 5-7 minutes on each side, until the chicken is browned and cooked through.

Add Pineapple: Once the chicken is cooked, add the pineapple chunks to the skillet and cook for an additional 2-3 minutes until heated.

Serve: Serve the chicken and pineapple hot, garnished with sliced green onions and sesame seeds. Enjoy your delightful meal!
