2 medium carrots, peeled and chopped

1 cup vegetable oil

1 cup sugar

4 eggs

2 cups all-purpose flour

1 tablespoon baking powder

Pinch of salt

1 cup chocolate sprinkles (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C) and prepare a bundt cake pan with butter and flour.

    In a blender, combine the chopped carrots, vegetable oil, sugar, and eggs. Blend until smooth.

      In a large mixing bowl, whisk together the flour, baking powder, and salt.

        Pour the carrot mixture into the dry ingredients and stir until just combined.

          Pour the batter into the prepared bundt pan, smoothing the top.

            Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

              Allow the cake to cool for a few minutes before inverting onto a cooling rack.

                Once cooled, sprinkle chocolate sprinkles over the top for decoration.
