Ingredients

4 ripe peaches, sliced

1/2 cup unsalted butter

1 cup brown sugar

1/4 cup bourbon

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup granulated sugar

2 large eggs

1/2 cup buttermilk

Instructions

Preheat your oven to 350°F (175°C).

In a skillet, melt the butter over medium heat. Add the brown sugar and bourbon, stirring until dissolved.

Remove from heat, then pour the mixture into the bottom of a greased 9-inch round cake pan. Arrange peach slices on top.

In a bowl, whisk together flour, baking powder, baking soda, and salt.

In another bowl, cream together the granulated sugar and remaining butter until fluffy. Add eggs one at a time, mixing well.

Stir in vanilla extract and buttermilk. Gradually mix in the dry ingredients until just combined.

Pour the batter over the peach layer in the cake pan.

Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Allow to cool for 10 minutes, then invert onto a serving plate.
