Ingredients
  

1 cup fresh blueberries

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, melted

1 cup buttermilk

2 large eggs

1 tsp vanilla extract

2 tsp baking powder

½ tsp baking soda

½ tsp salt

Zest of 1 lemon (optional)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Mix well to combine.

      In another bowl, whisk together the melted butter, buttermilk, eggs, vanilla extract, and lemon zest until fully mixed.

        Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Do not overmix; the batter should be slightly lumpy.

          Carefully fold in the blueberries to not break them apart.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick comes out clean.

                Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
