Ingredients
  

2 cups fresh blackberries

1/2 cup granulated sugar

1 tablespoon lemon juice

2 1/2 cups heavy whipping cream

3 tablespoons gelatin powder

1/4 cup cold water

Mint leaves (for garnish)

Instructions
 

In a blender, puree the blackberries until smooth. Strain the puree through a fine mesh sieve to remove seeds.

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5 minutes to bloom.

      In a saucepan over medium heat, combine the blackberry puree, sugar, and lemon juice. Stir until the sugar dissolves. Remove from heat and stir in the bloomed gelatin until fully dissolved.

        In a large mixing bowl, whip the heavy cream until soft peaks form.

          Gently fold the blackberry mixture into the whipped cream until well combined.

            Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

              Garnish with mint leaves before serving.
