Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup buttermilk, room temperature

½ cup vegetable oil

2 tsp vanilla extract

1 cup hot water

2 tbsp black food coloring (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2-4 tbsp milk (as needed for consistency)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract. Gradually add your wet mixture to the dry ingredients, mixing until just combined.

        Incorporate Hot Water: Slowly stir in the hot water and black food coloring, if using. The batter will be thin, but that’s okay!

          Bake the Cake: Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

            Prepare Cream Cheese Frosting: In a large bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing on low until combined. Adjust the consistency with milk as necessary.

              Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.
