500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper (red or green), sliced

1 onion, sliced

2 spring onions, chopped (for garnish)

1 teaspoon sesame oil

Salt to taste

Optional: steamed rice for serving

Marinate Chicken: In a mixing bowl, combine chicken pieces with soy sauce, oyster sauce, cornstarch, and half of the black pepper. Mix well and let it marinate for at least 30 minutes.

    Prepare Stir-Fry: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the pan, cooking for about 5-7 minutes until browned and cooked through. Remove chicken from the pan and set aside.

      Sauté Aromatics: In the same skillet, add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

        Add Vegetables: Add the sliced bell pepper and onion to the pan. Sauté for 3-4 minutes until the vegetables are tender-crisp.

          Combine Ingredients: Return the cooked chicken to the skillet. Sprinkle the remaining black pepper and add a dash of salt if needed. Stir everything together for 2-3 minutes, allowing the flavors to meld.

            Finish and Serve: Drizzle sesame oil over the chicken and give it one last stir. Garnish with chopped spring onions. Serve hot over steamed rice, if desired.
