Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly cracked

3 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper (red or green), sliced

1 onion, sliced

2 spring onions, chopped (for garnish)

Salt to taste

Cooked jasmine rice or steamed rice (for serving)

Instructions
 

In a large bowl, combine the chicken pieces, soy sauce, oyster sauce, and half of the black pepper. Mix well and marinate for 30 minutes to enhance flavor.

    After marinating, add cornstarch to the chicken mixture and toss until the pieces are evenly coated.

      Heat the vegetable oil in a large skillet or wok over medium-high heat.

        Once the oil is hot, add the marinated chicken in a single layer. Cook for about 4-5 minutes, without stirring, to get a nice sear on the chicken.

          After 5 minutes, flip the chicken pieces and cook for another 4-5 minutes until browned and fully cooked. Remove the chicken and set aside.

            In the same skillet, add the minced garlic, grated ginger, sliced onion, and bell pepper. Sauté for about 2-3 minutes until the veggies are tender yet crisp.

              Return the chicken to the skillet and sprinkle the remaining black pepper and salt to taste. Stir well to combine all ingredients and cook for an additional 2 minutes to heat everything through.

                Garnish with chopped spring onions before serving.

                  Serve hot over cooked jasmine rice or steamed rice to soak up every bit of the spicy sauce!
