Ingredients

1 lb flank or skirt steak

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (preferably cilantro lime rice)

1 cup black beans (drained and rinsed)

1 cup shredded cheese (such as cheddar or Monterey Jack)

1 avocado (sliced or mashed)

Salsa or pico de gallo

Sour cream (optional)

Fresh cilantro (for garnish)

Instructions

Start by marinating the steak. In a bowl, combine olive oil, garlic powder, cumin, chili powder, salt, and pepper. Coat the steak in this mixture, cover, and refrigerate for at least 30 minutes.

While the steak is marinating, prepare the rice and black beans. For a zesty twist, mix the cooked rice with lime juice and chopped cilantro.

After marination, heat a grill or skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for a few minutes before slicing.

Warm the flour tortillas in a pan or microwave until they are pliable.

Assemble the burrito: Start with a tortilla, layer a scoop of rice, black beans, sliced steak, cheese, avocado, and top it with salsa or pico de gallo.

Roll the burrito tightly by folding in the sides and then wrapping the tortilla around the filling.

(Optional) Toast the burrito in a pan for 2-3 minutes on each side for extra crispiness.

Cut in half and serve with a dollop of sour cream and a sprinkle of fresh cilantro.
