Ingredients
  

1 cup dried red beans

4 cups water

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced

2 celery stalks, diced

1 teaspoon cumin

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

2 cups white or brown rice

Fresh parsley for garnish

Instructions
 

Soak the Beans: Rinse the red beans and soak them in water overnight.

    Cook the Beans: Drain the soaked beans and place them in a large pot with 4 cups of fresh water. Bring to a boil, then reduce the heat and let them simmer for about 1 hour or until tender.

      Sauté the Veggies: In a separate skillet, heat a little oil over medium heat. Add the chopped onion, minced garlic, diced bell pepper, and celery. Sauté until the vegetables are soft.

        Combine & Season: Add the sautéed vegetables to the pot with the beans. Stir in the cumin, paprika, bay leaf, salt, and pepper. Let it simmer for another 20-30 minutes to blend the flavors.

          Cook the Rice: While the beans are simmering, cook the rice according to package instructions.

            Serve: Remove the bay leaf from the bean mixture. Serve the beans over rice and garnish with fresh parsley.
