4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

Fresh parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and dried thyme to create a seasoning blend.

      Pat dry the chicken thighs with paper towels to ensure crispy skin.

        Rub the seasoning blend all over the chicken thighs, making sure to get it under the skin as well for maximum flavor.

          Place the seasoned thighs skin-side up on a baking sheet lined with parchment paper or in a cast iron skillet.

            Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.

              For extra crispiness, you can broil the thighs for an additional 2-3 minutes, but keep a close eye to prevent burning.

                Remove from the oven, let rest for 5 minutes, then garnish with fresh parsley before serving.
