1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups fresh strawberries, sliced

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup whipped cream

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan to form the crust.

      Bake the crust for about 10 minutes, then let it cool.

        In another bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.

          Fold in whipped cream gently until there are no visible streaks.

            Pour the cream cheese mixture over the cooled crust and smooth the top with a spatula.

              Arrange sliced strawberries on top of the cheesecake layer.

                Chill the cheesecake in the refrigerator for at least 4 hours or until firm.

                  Garnish with fresh mint leaves before serving, if desired.
