Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup granulated sugar

4 packages (8 oz each) cream cheese, softened

1 tsp vanilla extract

4 large eggs

1 cup mixed berries (strawberries, blueberries, raspberries)

2 tbsp cornstarch

½ cup sour cream

Fresh berries for garnish

Instructions
 

Preheat your oven to 325°F (160°C).

    In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.

      Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create the crust.

        In a large bowl, beat the softened cream cheese until smooth and creamy.

          Gradually add sugar and continue to mix until well merged.

            Add the vanilla extract and mix again.

              Add eggs one at a time, mixing on low speed until just combined after each addition.

                In a small bowl, toss the mixed berries with cornstarch to coat them.

                  Pour half the cheesecake batter over the crust. Drop spoonfuls of the berry mixture over the batter, swirl gently with a knife.

                    Pour the remaining batter over the berries and swirl again for a marbled effect.

                      Bake in the preheated oven for 50-60 minutes until the edges are set but the center still jiggles slightly.

                        Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

                          Chill in the refrigerator for at least 4 hours or overnight before serving. Garnish with fresh berries before slicing.
