1 sheet of puff pastry (thawed)

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 egg (beaten for egg wash)

Flour (for dusting)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to about 1/8 inch thickness. Cut it into 3-inch squares.

      Prepare Filling: In a bowl, combine the halved cherry tomatoes, chopped basil, shredded mozzarella, olive oil, balsamic vinegar, salt, and pepper. Mix until well combined.

        Assemble Bites: Place a spoonful of the tomato-basil mixture in the center of each puff pastry square. Make sure to leave enough space around the edges.

          Fold and Seal: Fold the corners of the pastry squares toward the center, pinching them together to seal the filling inside. Place the assembled bites on the prepared baking sheet.

            Add Egg Wash: Brush each puff pastry bite with the beaten egg to give them a golden color when baked.

              Bake: Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.

                Cool and Serve: Once baked, let the bites cool for a few minutes. Serve warm as an appetizer or snack.
