1 pound flank steak, thinly sliced against the grain

2 tablespoons cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 small red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Sesame seeds, for garnish

Green onions, sliced, for garnish

Instructions
 

Prepare the Beef: In a medium bowl, toss the thinly sliced flank steak with cornstarch until well-coated. This will help achieve a tender texture and a nice sear.

    Make the Marinade: In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, minced ginger, and crushed red pepper flakes (if using). Set aside.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Once the oil is shimmering, add the beef in a single layer (you may need to do this in batches). Sear for about 2-3 minutes until browned, then remove from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions and peppers, stirring frequently for about 3 minutes until they start to soften.

          Add Broccoli: Toss in the broccoli florets and continue cooking for another 2-3 minutes until vibrant green and slightly tender.

            Combine and Stir: Return the cooked beef to the skillet and pour in the marinade. Stir everything together, ensuring the beef and vegetables are well-coated in the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and the flavors to meld.

              Serve: Remove from heat. Garnish with sesame seeds and sliced green onions. Serve immediately over steamed rice or noodles if desired.
