Ingredients
  

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 cup granulated sugar

2 large eggs

1 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith)

1 teaspoon vanilla extract

Vegetable oil for frying

Powdered sugar for dusting

Instructions
 

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar.

    In another bowl, beat the eggs and combine with the buttermilk and vanilla extract.

      Pour the wet ingredients into the dry ingredients, mixing until just combined. Fold in the diced apples gently.

        Heat vegetable oil in a deep skillet or pot over medium heat (about 350°F).

          Drop small spoonfuls of the batter into the hot oil, frying in batches until golden brown, about 2-3 minutes per side.

            Remove the fritter bites with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

              Dust with powdered sugar before serving.
