Ingredients
  

1 lb chicken breast, diced

1 cup brown rice

2 cups chicken broth

1 can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup bell pepper, diced (any color)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion and garlic, sauté until soft.

    Add the diced chicken and cook until browned on all sides.

      Stir in the taco seasoning, ensuring the chicken is well coated.

        Pour in the chicken broth and add the brown rice, stirring to combine.

          Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.

            After 15 minutes, add the black beans, corn, and bell pepper, stirring to incorporate.

              Cover again and cook for an additional 5-10 minutes, until rice is tender and liquid is absorbed.

                Season with salt and pepper to taste.
