    Cut the top off the garlic bulb and drizzle with olive oil. Wrap in foil and roast for 30 minutes.

      In a large pot, heat olive oil over medium heat. Add onions and sauté until soft.

        Add the diced potatoes and vegetable stock, then bring to a boil.

          Reduce heat and simmer until potatoes are tender.

            Squeeze the roasted garlic cloves into the pot, then use an immersion blender to blend until smooth.
