Ingredients
  

1 pound shrimp, peeled and deveined

8 small tortillas (corn or flour)

2 cups shredded Monterey Jack cheese

1 cup sour cream

1 cup green enchilada sauce

1/2 cup diced onions

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Preheat the oven to 350°F (175°C).

    In a skillet over medium heat, add a bit of oil and sauté the diced onions until translucent.

      Add the minced garlic and shrimp to the skillet, cooking until the shrimp turns pink, about 3-4 minutes.

        Stir in the smoked paprika, cumin, salt, and pepper. Mix well and remove from heat.

          In a bowl, combine the sour cream with half of the green enchilada sauce.

            To assemble the enchiladas, spread a spoonful of the sour cream mixture on a tortilla, add shrimp filling, and roll tightly.

              Place the rolled enchiladas seam-side down in a greased baking dish. Repeat with remaining tortillas.

                Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the shredded cheese.

                  Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and slightly golden.

                    Garnish with fresh cilantro and serve with lime wedges on the side.
