Ingredients
  

2 large chicken breasts

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1 clove garlic, minced

1 tsp dried oregano

Salt and pepper, to taste

1/2 cup breadcrumbs (optional for topping)

2 tbsp olive oil

1 lemon, zested and juiced

Fresh basil, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the filling: In a mixing bowl, combine the chopped spinach, cream cheese, feta cheese, sun-dried tomatoes, minced garlic, oregano, lemon zest, salt, and pepper. Mix well until all ingredients are well combined.

      Prepare the chicken: Place the chicken breasts on a cutting board. Using a sharp knife, make a pocket in each chicken breast; do not cut all the way through.

        Stuff the chicken: Carefully fill each pocket with the spinach and cheese mixture, ensuring not to overstuff. If necessary, secure the openings with toothpicks.

          Sear the chicken: In an oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.

            Bake the chicken: If using breadcrumbs, sprinkle them on top of the chicken breasts for added crunch. Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

              Serve: Remove the toothpicks carefully before serving. Drizzle with lemon juice and garnish with fresh basil. Pair with a side of roasted vegetables or a light salad.
