Ingredients
  

1 can chickpeas, drained and rinsed

1 medium head cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Zest and juice of 1 lime

Salt and pepper to taste

4 whole wheat tortillas

Fresh cilantro, chopped (for garnish)

Avocado slices (optional)

Greek yogurt or sour cream (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the cauliflower florets with olive oil, chili powder, cumin, smoked paprika, lime zest, salt, and pepper until evenly coated.

      Spread the cauliflower on a baking sheet and roast for 20-25 minutes, or until golden brown, tossing halfway through for even cooking.

        In a saucepan, sauté the chickpeas over medium heat for about 5 minutes until warmed through. Add lime juice and stir to combine.

          Lay out the tortillas and add a generous scoop of the roasted cauliflower and chickpeas to the center of each wrap.

            Top with chopped cilantro and avocado slices if using.

              Roll up the tortillas tightly, folding in the sides as you go, to create a wrap.

                Serve immediately with a dollop of Greek yogurt or sour cream on the side, if desired.
