Ingredients
  

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

4 cups chicken or vegetable broth

1 (14-ounce) can diced tomatoes (with juices)

1 (9-ounce) package fresh or frozen cheese tortellini

2 cups baby spinach

Salt and pepper, to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped, for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Once hot, add the Italian sausage. Cook, breaking it apart with a spoon, until browned and no longer pink, about 5-7 minutes.

    Add the diced onion, garlic, carrots, and celery to the pot. Sauté for another 5 minutes, or until the vegetables are softened and fragrant.

      Stir in the dried Italian herbs and cook for an additional minute.

        Pour in the chicken or vegetable broth and diced tomatoes (including juices). Bring to a simmer.

          Add the tortellini and cook according to package directions, usually about 3-5 minutes, until they are tender.

            Stir in the baby spinach and let it wilt for 1-2 minutes. Season the soup with salt and pepper to taste.

              Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
