½ cup cold unsalted butter, cubed

1 large egg yolk

2-3 tablespoons ice water

8 oz dark chocolate (70% cocoa), chopped

½ cup heavy cream

¼ cup granulated sugar

1 teaspoon vanilla extract

Sea salt flakes for topping

Make the Tart Crust: In a bowl, whisk together the flour, cocoa powder, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg yolk and ice water until the dough comes together. Wrap in plastic and chill for 30 minutes.

    Bake the Crust: Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan. Poke holes with a fork and bake for 15 minutes. Let it cool.

      Prepare the Filling: In a saucepan, heat the heavy cream until just boiling. Pour over the chopped dark chocolate and let sit for 2 minutes. Stir until smooth. Mix in the sugar and vanilla until well combined.

        Assemble the Tart: Pour the chocolate filling into the cooled tart shell. Smooth it out and let it set in the refrigerator for at least 1 hour.
