4 medium-sized sweet potatoes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder (optional)

1 teaspoon paprika (optional)

Fresh herbs for garnish (such as parsley or thyme)

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the sweet potatoes thoroughly, then pat them dry.

      Cut the sweet potatoes into even cubes or wedges for uniform roasting.

        In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, and any additional seasonings you prefer (garlic powder and paprika).

          Spread the sweet potato pieces evenly on a baking sheet lined with parchment paper.

            Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they become golden brown and crispy.

              Once done, remove from the oven and let them cool slightly. Garnish with fresh herbs before serving.
