1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

Zest of 1 lemon

½ cup fresh raspberries (or frozen, thawed)

1 cup powdered sugar (for icing)

2 tbsp lemon juice (for icing)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a loaf pan.

    In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

      In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

        Beat in the eggs one at a time, then stir in the vanilla extract.

          Add sour cream and lemon zest to the mixture and combine well.

            Gradually add the dry ingredients to the wet mixture, stirring until just combined.

              Gently fold in the fresh raspberries.

                Pour the batter into the prepared loaf pan and smooth the top.

                  Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                    While the loaf is cooling, prepare the tangy icing by mixing the powdered sugar and lemon juice until smooth.

                      Once the loaf has cooled completely, drizzle the icing over the top and let it set.
