2 boneless, skinless chicken breasts

1 cup orzo pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust for spice level)

3 cups chicken broth

1/2 cup heavy cream

1/2 cup Parmesan cheese, grated

Fresh basil leaves for garnish

Salt and pepper to taste

Sear the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the pan and sear for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside to rest.

    Sauté Vegetables: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Then add cherry tomatoes and red bell pepper. Cook for about 3-4 minutes until the vegetables start to soften.

      Cook the Orzo: Stir in the orzo pasta, dried oregano, dried basil, and red pepper flakes. Cook for 1 minute, allowing the pasta to toast slightly before adding the chicken broth.

        Simmer Everything Together: Pour in the chicken broth and bring to a gentle boil. Reduce heat to a simmer and cook uncovered for about 10-12 minutes until the orzo is tender and most of the liquid is absorbed, stirring occasionally.

          Finish the Dish: While the orzo is cooking, slice the rested chicken breasts. Once the orzo is cooked, stir in the heavy cream and grated Parmesan cheese. Adjust seasoning with salt and pepper if needed.

            Serve: Add the sliced chicken on top of the creamy orzo. Garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese, if desired.
