Pineapple Condensed Milk Cake

Ingredients
  

1 can (400g) of pineapple chunks, drained

1 cup of condensed milk

1 cup of all-purpose flour

1/2 cup of unsweetened shredded coconut

1/2 cup of sugar

1/2 cup of unsalted butter, melted

2 large eggs

1 teaspoon of baking powder

1 teaspoon of vanilla extract

A pinch of salt

Fresh pineapple wedges and coconut flakes for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

    In a large mixing bowl, combine the melted butter, sugar, and condensed milk. Mix until smooth.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In another bowl, whisk together the flour, baking powder, shredded coconut, and salt.

          Gradually fold the dry ingredients into the wet mixture until just combined.

            Gently fold in the pineapple chunks until evenly distributed in the batter.

              Pour the batter into the pre-greased cake pan and spread it evenly.

                Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                    Optional: Top with fresh pineapple wedges and additional coconut flakes before serving.
