Ingredients
  

5 pounds of Yukon Gold potatoes

1 cup of heavy cream

1/2 cup of unsalted butter, softened

1 cup of sour cream

1/2 cup of grated Parmesan cheese

Salt, to taste

Freshly ground black pepper, to taste

Optional: garlic powder, chives, or rosemary for seasoning

Instructions
 

Peel and cut the Yukon Gold potatoes into uniform chunks for even cooking.

    Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.

      Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

        Drain the potatoes and return them to the pot over low heat to evaporate any excess moisture.

          Use a potato masher or ricer to mash the potatoes until smooth.

            In a mixing bowl, combine the heavy cream, softened butter, sour cream, and Parmesan cheese. Stir until smooth.

              Gradually add the cream mixture to the mashed potatoes, mixing well. Adjust salt, pepper, and any additional seasonings to taste.

                Transfer the mashed potatoes to a greased baking dish. Cover with plastic wrap or foil.

                  Refrigerate for up to 2 days or freeze for longer storage.

                    When ready to serve, preheat oven to 350°F (175°C). Remove the covering and bake for 30-40 minutes, until heated through. For an extra touch, broil for the last 2-3 minutes to get a golden top.
