Ingredients
  

8 oz pasta (linguine or spaghetti)

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 tsp Jamaican jerk seasoning

1 cup coconut milk

1 cup cherry tomatoes, halved

2 tbsp fresh cilantro, chopped

Salt and pepper to taste

Juice of 1 lime

Instructions
 

Cook the pasta according to package instructions. Drain and set aside.

    In a large skillet, heat olive oil over medium heat.

      Add the diced onion and sauté until translucent.

        Stir in the minced garlic and sliced bell pepper; cook for 2-3 minutes until softened.

          Sprinkle in the jerk seasoning and mix to coat the vegetables evenly.

            Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

              Pour in the coconut milk and bring to a gentle simmer.

                Add the halved cherry tomatoes and cook for an additional 2 minutes.

                  Mix in the cooked pasta, ensuring everything is well combined.

                    Season with salt, pepper, and lime juice. Garnish with fresh cilantro before serving.
