8 oz fettuccine pasta

1 tablespoon olive oil

1 medium onion, chopped

3 garlic cloves, minced

8 oz mushrooms, sliced

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 cup fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

Instructions
 

Cook fettuccine pasta according to package instructions. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).

      Stir in minced garlic and sliced mushrooms. Cook until mushrooms are tender and moisture is evaporated (about 5-7 minutes).

        Reduce heat to low, and add ricotta cheese to the skillet. Stir until well combined.

          Add the cooked pasta, grated Parmesan cheese, salt, and pepper. Toss to combine and cook until heated through.

            Serve garnished with chopped parsley and red pepper flakes, if desired.
