Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract for the filling

1/2 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

      Beat in the eggs, one at a time, along with the vanilla extract.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until combined.

          In another bowl, mix together the cream cheese, powdered sugar, and vanilla extract for the filling until smooth and creamy.

            Scoop a tablespoon of cookie dough, flatten it, and place about a teaspoon of the cheesecake filling in the center. Fold the dough over to seal the filling inside. Repeat for all cookies.

              Place the stuffed cookies on a parchment-lined baking sheet. If desired, sprinkle chocolate chips on top.

                Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the sheet for a few minutes before transferring to a wire rack.
