Ingredients
  

1 lb boneless chicken thighs, cut into bite-sized pieces

1 lb shrimp, peeled and deveined

2 cups mixed vegetables (zucchini, bell peppers, and mushrooms)

3 cups cooked jasmine rice

4 cloves garlic, minced

1 inch ginger, grated

4 tbsp soy sauce

2 tbsp sesame oil

1 tbsp honey

1 tbsp rice vinegar

¼ cup scallions, sliced

2 tsp sesame seeds (for garnish)

Salt and pepper, to taste

Optional: hibachi dipping sauce

Instructions
 

Preheat the Grill/Griddle: Heat a large griddle or grill pan over medium-high heat until hot.

    Marinate Chicken and Shrimp: In a bowl, mix together the soy sauce, sesame oil, honey, rice vinegar, garlic, ginger, salt, and pepper. Divide the marinade in half. Add the chicken to one half and the shrimp to the other, allowing both to marinate for at least 15 minutes.

      Cook the Chicken: Add the marinated chicken to the hot griddle and cook for about 5-7 minutes or until golden brown and cooked through. Remove from the griddle and set aside.

        Cook the Shrimp: In the same griddle, add the marinated shrimp and cook for 3-4 minutes until they turn pink and opaque. Remove and set aside with the chicken.

          Stir-Fry the Vegetables: Add the mixed vegetables to the hot griddle. Stir-fry for about 3-4 minutes until they are tender-crisp.

            Combine Ingredients: Return the chicken and shrimp to the griddle. Pour the remaining marinade over everything and stir to combine. Cook for an additional 2 minutes to heat through.

              Serve with Rice: Serve the hibachi chicken and shrimp over warm jasmine rice. Garnish with scallions and sesame seeds. Add hibachi dipping sauce if desired.
